Fragrance is an important clue. Heck, when you are slicing them up, sample a slice and see if it's right (I did that last night and threw out three peaches that were overripe). It sometimes helps to use peaches that are slightly firmer than you'd ordinarily choose for eating out of hand--as long as they are sweet enough.
