Homemade Tomato-basil soup in thermos (recipe from The Vegan Lunchbox). Apple butter/peanut butter sandwich on whole wheat, plum tomato, kale and spinach turnover (recipe from Cooking Light; these freeze really well), and mixture of cottage cheese, canned pumpkin and maple syrup for dessert.

I discovered the usefulness of canned pumpkin when I was pregnant--it's recommended because it's an easy way to get your Vitamin A (a couple tablespoons gives you your daily requirement). It's good mixed with all sorts of things. I often mix it with peanut butter as a spread for toast or bagels.

One tip that I got from that group is that you can get those flexible silicon muffin cups to use for packing; they work nicely for dividing the large compartments. See this picture for an example.
