Homemade Tomato-basil soup in thermos (recipe from The Vegan Lunchbox). Apple butter/peanut butter sandwich on whole wheat, plum tomato, kale and spinach turnover (recipe from Cooking Light; these freeze really well), and mixture of cottage cheese, canned pumpkin and maple syrup for dessert.

There's something wrong with the kale turnover link, but I'd like to see the recipe. It all certainly looks delicious. I had a wonderful homemade tomato soup recipe last year, but the bunnies have eaten all our remotely ripe tomatoes this year so I haven't been able to replicate it.

Your dessert reminds me of a cheese. It's called Driftless. It's kind of ricotta like and made in Wisconsin from sheep's milk and one of the varieties has pumpkin and spices in it. It tastes like a pumpkin cheesecake. If you ever see it you should pick some up.

I discovered the usefulness of canned pumpkin when I was pregnant--it's recommended because it's an easy way to get your Vitamin A (a couple tablespoons gives you your daily requirement). It's good mixed with all sorts of things. I often mix it with peanut butter as a spread for toast or bagels.

I actually had a cat once who was put on a special diet which involved 2 tablespoons of pumpkin with other food. Apparently in both cats and humans pumpkin is really easy to digest and helps with digestion.

It's a wonder food!

Peg, every time I see you post about these wonderful looking lunches, I always wonder two things. The first is where did she get that fabulous box (I followed the link and found out). The second is how did you get started on this colorful packed lunch adventure?

I got started because I was poking around the Internet in desperation, trying to find ideas for lunches that Delia would actually eat. And I found Jennifer McCann's blog The Vegan Lunchbox (syndicated as [livejournal.com profile] vegan_lunchbox). That's what got me started! I took frozen lunches for years, but since I've gotten my Laptop Lunchbox, I've had so much fun that I know I'll never go back to frozen.

Glad you've got a Laptop Lunchbox, too. I hope you enjoy it as much as I do! My lunches are much more interesting, I find I eat much healthier and I use up a lot of leftovers. It's really fun and convenient.

There's also a Flickr group for Laptop Lunchboxes where you can get lots of ideas.

One tip that I got from that group is that you can get those flexible silicon muffin cups to use for packing; they work nicely for dividing the large compartments. See this picture for an example.
