Corned beef hash?

I've been struck by a St. Patrick's Day impulse. Anyone have a good recipe for corned beef hash?

Dinner was a wild success. I made papersky's corned beef hash. I thought it was absolutely delicious. Rob said he liked it too, but he grumbled about the onions. Why oh why did I have to marry a man who hates onions? Actually, I gave each of the girls just a dab of the hash and instead gave them slices of corned beef and a plain potato (which they ignored; both claim to hate potatoes, although they love french fries). I also included baked beans as a side dish at papersky's suggestion. The girls tried the hash and were polite about it. But what was particularly astounding was that Fiona took five helpings of the corned beef. This is unheard of behavior for her. She's a terribly picky eater, but she just about inhaled that corned beef. I'd never served it before, but I'm sure it will appear on the menu again.

I drank Guinness with my dinner. I try Guinness every once in a while, hoping I will like it. I usually don't. But I will say that the flavor combined really well with the corned beef hash and the baked beans.

To complete the round of Irish comfort food, I served cinnamon bread pudding for dessert. It's delicious with a dollop of vanilla ice cream on top. And it's even more delicious with a dollop of Bailey's Irish Cream on top of the dollop of ice cream.

On a night featuring our President on the TV explaining earnestly why he wants to blow up a bunch of people who never hurt him, for reasons that are a mystery to many (and no, I never turned his speech on), comfort food was definitely the way to go. I'm ignoring the issue of the high number of calories consumed tonight.

I'll just have to apply myself with renewed vigor to my workout tomorrow.
