I poached chicken breasts, and served it in slices over a bed of red lettuce. On top of that I put a mango/canteloupe salsa which I threw together. Flavored the salsa with a combination of cider vinegar, fresh lime juice, coriander and cayenne. I put scallions and cilantro in mine only because I know that Neither Rob Nor Fiona Do Scallions or Cilantro.

I thought it was ravishingly delicious, and I was also smug about how healthy it was. Fiona wasn't very hungry since she had a late lunch and so didn't eat much but was surprisingly enthusiastic about the taste, and rated it an 8 out of 10, which is unusually high for her.

Rob: "I don't like mangos. I don't like canteloupe. I don't like red lettuce."

Well, phooey. The leftovers will make a delicious lunch for me tomorrow.

It sounds scrumptious to me! I love fruit salsas. Never thought of doing one with cantaloupe, but I think I'll try it. I love cantaloupe.

Try grilling the fruits you want to use in your salsa. The caramelization of the char really adds to the flavor melding. I guess the quickness of heat is why I like gas grills year round.

I realize that Rob just said he does not care for mangoes. We have a recipe very similar to that in which I marinate the chicken in soy and lime, and then pan-cook it with the marinade. To go with it I make a salad that is usually mangoes, honey, coriander, soy, lime, mixed well and served over spring greens. But when I can't get mangoes at all, I sub in canned peaches. So maybe you could get some mileage off that?

I don't much get the not liking mango thing, but I suppose each to his own. Apparently there is an oil in the skin that can trigger allergens, and a dear friend of mine can't stand them either.

I hafta admit, the idea of a fruit salsa on meat seems...wrong. (There was a restaraunt in my old neighborhood [Linden Hills] that I never ate at 'cuz every dish they had had some trendy wrong, wrong WRONG bit to it. (You know, like a pasta dish drenched a creme sauce made from clarified beaver butter...)

Never the less, the next time Rob does that toss a cookbook at 'em, and tell 'him to learn or starve. I mean, if I can cook, anyone can. ;-)

That sounds marvelous, and you get two nice meals out of it.

I'm not sure whether you should be throwing a cookbook at Rob, or demanding a list of everything he will and won't eat. (Years ago, I visited two friends of mine and found, on the refrigerator, a list labeled "vegetarian meals Alan will eat"--because his partner was doing a lot of vegetarian cooking, in part to accommodate vegetarian friends, and this way she knew which ones were good to cook if she was cooking for him as well.)

Heck with Rob, can I come over for dinner?

I recently made a receipe involvin poaching chicken in balsamic vinegar and chicken broth that was quite tasty, but their version of "poaching" was a little different. IIRC, it was a cup of vinegar and two cups of broth boiled together. Put in the chicekn, take the pot off the flame and let it sit a while (I think it was 15-20 minutes) Then I was supposed to slice the chicken to serve, while reducing the sauce to 1/4 cup in ten minutes. I can only conclude that last part was an error.... but the recipe was tasty, nonetheless.

Yes, which is why some people like myself say mangoes taste 'tinny'. Cilantro is also another thing I can't eat as it tastes metallic and soapy. It's due to genes - if you have the gene that allows you to taste it, cilantro is apparently good. If not, it's pretty awful. If one doesn't have the gene, cilantro can also make one ill, so "just eating around it" is not an option. No one says that to people who are allergic to peanuts.

So skip the mangoes and cilantro.

Other than that dinner sounded good. I've never made a salsa and am very unlikely to do so in the foreseeable future.

I seldom take the time or energy to defend myself on these pages, but this time I will.

I too had a late lunch and wasn't particularly hungry. I did eat the meal, mango and cantelope included. Red lettuce and chicken, too. More than sample bites.

I said no negative things about the meal as I was eating it. No complaining, no whining. Silence on the topic.

As she is wont to do, Peg asked for my rating. She asked me what I thought of it. Frequently she'll note in the cookbooks the ratings given the various recipes by the family. I gave my honest feedback: "Four and a half out of ten; I don't like mangos, I don't like cantelope, I don't like red lettuce, it's too bitter for me. I thought the poached chicken seemed undercooked to me."

I'm glad they liked it. I'm glad she ate it for lunch today. I didn't badmouth it. Just gave my honest reaction when it was called for.

It was very pretty on the plate.

Yes, Red lettuce is quite bitter to the taste and not at all to my liking. I don't do well with those mixed "field greens" either.
