We have made pameladean's Vegan French Silk Pie, which is melted chocolate blended with tofu until smooth, and then thrown in a chocolate pie shell. Everyone loves that. That's about the only tofu recipe that Delia's tried that she's liked.
I had thought of the Wedge this afternoon, but didn't have a chance yet to check to see if they had classes.
