This one's somewhat prettier, although that sandwich looks a little messy:



Red cabbage tossed with a chopped clementine, rice vinegar and a teaspoon of sugar; gingersnaps and pecans; plain yogurt topped with pomegranate seeds; peanut butter and apple butter on whole wheat.

Clementines and pecans! I have had to stop myself from trying to live on those two things alone since Christmas. People need more kinds of food than just clementines and pecans, but they're so good....

I finally googled apple butter (something I mean to do every time you mention it) and found that it isn't what I imagined! Sounds tasty though...

It's really tasty. I add it as a sweetener to a lot of stuff: yogurt, cottage cheese, pumpkin, etc.

I guess I'm having trouble getting my head around the peanut/apple butter combo. (Part of it is that I've never found apple butter I cared much for.)

We often have apple slices dipped in peanut butter as a snack around our house, so I see the connection of flavors. I grew up with peanut butter and lettuce sandwiches (tastes similar to peanut butter and celery), and never had peanut butter and jelly until high school!

I used to eat peanut butter and apple butter sandwiches all the time as a kid. On alternate days, it was peanut butter and guava jelly.

Apple butter's also great by itself on toast.

It's the Laptop Lunchbox, which was definitely designed with bento boxes in mind. I learned about it from the blog the Vegan Lunchbox ([livejournal.com profile] vegan_lunchbox). I periodically post pictures of my lunch. There's a Flickr.com group where people post pictures of their lunches in Laptop Lunchboxes, which gives me lots more ideas.
