Laptop lunchbox

vegan_lunchbox, I bought Laptop Lunches for me and Delia. Delia had to rush out the door before I could take a picture of hers, but here's mine for the first day: Chicken orange curry with lentils in the back (from
naomikritzer), a vegetable medley in the front (cauliflower, broccoli, artichoke hearts and beans marinated in Newman's own balsamic vinagrette), cantelope (there was a frantic search for the melon baller this morning) and homemade chocolate yogurt: melt chocolate chips in the microwave with a TB of water for one minute, and stir in plain yogurt.
Delia had the melon and chocolate yogurt, also, and then she had a sandwich and some sliced orange bell pepper. The goal is to try to include one fruit and one vegetable each day. We are going to have to do some heavy-duty exploring of vegetables for Miss Delia. I was frankly surprised that she agreed to the sliced bell pepper, since she has usually refused it in the past. Perhaps her new Laptop Lunchbox gives the bell pepper an exciting new glamour.

I won't be posting our lunches each day, goodness knows, but just thought I'd show off our starting attempt.
Edited to add: Well, that was certainly more than enough food for one adult for lunch. The marinated vegetables leaked just a little bit, but then, I hadn't put the cover on that compartment. I'll know to do that next time. I would say that the first day, at least for me, was a success.
Edited to add again: Delia handled the bell pepper in her lunch by--simply not eating any of it. Which is what I expected she would do. Just a few bites of the sandwich, 1/2 of the cantelope, and all of the chocolate yogurt. She is a slow eater, and it is a continual problem that she doesn't finish her lunch.
