I tried to go back and look, but couldn't find it... Don't you have a pesto recipe you use to use up your basil and freeze it for the winter? I have a great mini crop of basil this year that would break my heart to let go to waste. If my memory is serving me correctly- would you mind sharing that recipe again?
2 cups fresh basil leaves 4 garlic cloves 1/2 cup italian parsley leaves (personally, I leave these out) 2 TB extra-virgin olive oil 6 TB chicken broth 1/4 cup grated Parmesan 1/4 tsp salt 1/4 tsp pepper Handful of pine nuts (traditional) or pecans (my personal substitute; cheaper)
In a food processor or blender, combine basil, garlic, and parsley; whirl to chop. Add olive oil, chicken broth, Parmesan cheese, salt and pepper. Process till smooth.
Use pesto at once, refrigerate for up to 2 days, or freeze. I drape ziplock sandwich baggie over 1/2 cup measure, then close, pushing out all the air, and throw in the freezer.
