The book The Post Punk Kitchen is probably my favorite. It's a vegan cookbook, and the ladies behind it are highly entertaining. They also give a lot of recipies that are designed for being inexpensive- they teach making your own tempeh, gluten, etc.
Only downside- they are vegan, and if a teenage vegetarian who is extraordinarily picky about protein is hard to feed, a vegan is worse.
If Delia was a big fan of eggs, that would be my suggestion for protein. Eggs, eggs, and more eggs. But lots of people hate them. And texture can be tough to standardize. (That said- an electric egg poacher is a wonderful thing. Consistent results).
