If she loves couscous, I would bet quinoa will go well texturally. The red and the plain are subtly different in taste. I dreamed last night that I was making quinoa with pieces of nearly-raw snow pea pod and cilantro and mint and lime juice and almonds in it. I blame you. (It was in no way a bad dream.)
