Remember this photograph, which I posted of one of my lunches last September?




On a whim, I sent it off to the Laptop Lunches website, because they have some promotional pictures of the way the lunchboxes can be used on their website, and I thought they'd be interested in seeing it, since (in my opinion) the photo was particularly pretty. I just got an email today that said:
Dear Peg,
Congratulations! You are a winner in the Laptop Lunches photo contest!

You have won a $25 gift certificate for the Laptop Lunches Web site, one copy of the "How To Make a Healthy Lunch for Kids" DVD, and a complimentary copy of our forthcoming book of creative lunch ideas (projected publication date: 2009).
Awesome. They sent a release for me to sign, and they'll use the picture in the forthcoming book.

The Laptop Lunchbox comes with its own recipe book, which will give you some ideas. I learned about the Laptop Lunchbox in the first place from Jennifer McCann, a vegan educator. I'm not vegan, but the photographs she posted of the lunches she made for her son were what got me interested in the Laptop Lunchbox in the first place. She wrote a cookbook with her recipes for the Laptop Lunchbox. I bought the first edition and I've used a lot of the recipes; I really like it. That edition sold out, but was so successful that a new edition is coming out in August. I do recommend getting it. Her blog is here and syndicated at LiveJournal at [livejournal.com profile] veganlunchbox. With her last edition of the cookbook, she covered shipping if you ordered it through her blog, so if you're interested in getting the recipe book, you might wait to see if she'll do that again before getting it at a bookstore.

Another great source of tips is the blog syndicated at LiveJournal at [livejournal.com profile] lunch_in_abox2. She has lots of great tips on speedy packing.

Another place you'll get a lot of ideas is the Flickr groups where people post pictures of their lunches: The bento box group and The Laptop Lunchbox group.

Really, once you get used to it, it's very easy. It's a great way to use up leftovers, of course; to speed things up, you can put your leftover dinner right in the containers at night when you clean up the kitchen, and then just grab and go in the morning. You can also make stuff ahead and freeze and then grab, like my kale and spinach turnovers. It takes me about five to fifteen minutes (if I'm doing something elaborate) to pack my lunch in the morning, and I find it totally worth it. I will never go back to taking frozen lunches anymore; my lunches are so much more interesting now (people will even comment how pretty they are) and I appreciate that I'm not adding to the waste stream anymore the way I did when I took frozen lunches.

How cool! I've found some of your other lunchbox pictures more enticing to me personally, but I'm happy that they liked it--I think that besides being an attractive and appealing lunch, it's a bit unusual in contents.
