I went out on the web, looking for vegetarian recipes for kids, since Delia has announced that she wants to go wholly vegetarian now. I found this blog and just about cried with envy. How I wish someone would pack lunches like this for me!

Hey, me too! I'm the designated lunchbox-packer around here. I want a lunchbox packer of my own.

If I were in lunchbox-packing distance of you, though, Peg, here is what you would have had in your lunchbox today (it's what my Belovedary got, some of these things were intentional leftovers from last night, where I cooked enough to pack for lunches today):

Dragon Salmon (salmon baked in a sweet-and-hot fruit/chili/soy marinade) over organic black japonica rice
garlic-roasted chioggia beets with lime-honey-mustard dressing
organic Cameo apple
homemade crispy sugar cookies
sparkling apple cider

Not vegan, but tasty!

I see they're using the Laptop Lunch system, which is so very cool. Kevin and I recently got two of them for ourselves! (For about half price at the Minnetonka Lakewinds Natural Foods).

What a timely post! I've just decided to cut meat out of my diet. I'm not going vegan, I still want to eat dairy products and possibly fish, but I'm going to syndicate these blogs to get cooking ideas and healthy eating alternatives. Thanks so much!

I'm obsessed with the veganlunchbox now. Wow. If I could just sneak some of those recipes in our regular repetoire... with the exception of the fake meat products- I've really tried to like various kinds and I just can't choke them down. But the muffins and soups and sandwiches and all that- I'm so very envious.
