Vegan Lunchbox

I went out on the web, looking for vegetarian recipes for kids, since Delia has announced that she wants to go wholly vegetarian now. I found this blog and just about cried with envy. How I wish someone would pack lunches like this for me!

Date: 2006-04-11 05:33 pm (UTC)If I were in lunchbox-packing distance of you, though, Peg, here is what you would have had in your lunchbox today (it's what my Belovedary got, some of these things were intentional leftovers from last night, where I cooked enough to pack for lunches today):
Dragon Salmon (salmon baked in a sweet-and-hot fruit/chili/soy marinade) over organic black japonica rice
garlic-roasted chioggia beets with lime-honey-mustard dressing
organic Cameo apple
homemade crispy sugar cookies
sparkling apple cider
Not vegan, but tasty!
