I haven't blogged a picture of my lunches in a while. Delia is interested in using her own laptop lunchbox again, so I made personal pizzas for both of us, using whole wheat pita pockets for the crusts. Delia, being Delia, wanted nothing but pizza sauce topped with mozzerella. I went a little more fancy:



Whole wheat pita topped with steamed kale, mixed with pizza sauce, chopped sun-dried tomatoes, chopped kalamata olives, and pine nuts. (Recipe from The Vegan Lunchbox.) On the side: homegrown miniature tomatoes and green grapes.

I'm cooking the rest of the kale down to make my favorite kale and spinach turnovers. Which, again, nobody in the family but me will eat.

Boy, that is so much prettier than a frozen lunch.

Edited to add: Oh, and I just found out today that there's a Flickr group for Laptop Lunches. Free ideas!

I wouldn't touch it (allergic to tomatoes, hate any and all olives) but that is truly one of the prettiest lunches I have ever seen!!

OH, that's so beautiful! Great presentation.

Not to be a downer, but I wonder what it looks like after you close the lid and carry it around for a while with the Laptop Lunchbag hanging from the shoulder strap.

(Although I continue to use my Laptop Lunchbox, I'm kinda disillusioned with the concept. Sure it looks great when you PACK it, but not so great when you open it later.)

However, I still love it when you post pictures of your lunch. Inspires me to pay more attention to mine.

I wondered about that, too. I put the tomatoes in a separate baggie, because I didn't plan on putting them with the pizza into the refrigerator (since tomatoes are best kept at room temperature--I plan to just put them around the pizza when I eat my meal.) I opened it to check when I got to work. The kale stuck to the pita quite well (glued in place by the pizza sauce, I expect). Just a few pine nuts were dislodged, and they were easy enough to put back into place.

I don't always feel like cooking, but this looked so yummy that I made pizza for dinner last night. I made two: The first one with ground bison, marinara sauce and mozzarella (for the boys), for the second one I added sauted portabello mushrooms and yellow peppers. I made a cabbage and apple salad and we were set. The boys loved it (Joram even tried some mushrooms) and Jesse and I ate waaaayyy too much.

I woke up this morning still full... Good thing I don't cook to often. hehehe
